Our gastronomy at Vergenoegd Löw is shaped by nature. The food we make is led by the seasons and the ever-changing availability of ingredients. Honest but inventive, unpretentious but sophisticated, it is rooted in the land that sustains us. We honour our Cape Winelands heritage and take our inspiration from the food legacy that precedes us. But we infuse our dishes with a modern sensibility and an appreciation for refinement.

All the dishes we serve follow a farm-to-table ethos. Ingredients are cultivated on the estate, according to holistic, regenerative, agroecological farming principles that begin with healthy, balanced soils, teeming with a wealth of microbial life. What we cannot provide ourselves we source from like-minded, independent suppliers.

“Let me say upfront that Mother Nature is my Boss Lady. She shapes much of my connection to the world. Nature is where I find what I want to say, using the language of food. Food fuels the stories I tell, with the ingredients and memories from my childhood all the way up to today. Nature sparks new food ideas in me, she triggers new tastes, and new tales that I infuse with culture and with history, all discovered through the people I meet, my travels and ongoing tasting and testing.

“You will always find echoes of the past in my Cape Winelands dishes but created in a modern idiom. Sometimes I’ll take an heirloom dish and interpret it afresh, with an indigenous plant, a herb or a spice not normally associated with the recipe. Not for the sake of novelty but because I believe it enriches the story.

Every month, I plan to share my world with you and bring you closer to our produce gardens and kitchens, to show you what I’m making and why. And how you can too, using seasonal, readily available ingredients, inspiring a new dialogue between you and the meals you make.”
