These recipes come directly from that garden \u2013 simple, fresh, and full of flavour, designed to let the ingredients shine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I love working with what\u2019s in season. It keeps the menu vibrant and, honestly, keeps me excited to cook every day. Here are some of my favourite garden-inspired recipes that we use in the restaurant, adapted so you can try them at home.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Grilled Zucchini with Herb-Infused Olive Oil&nbsp;<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Why I Love It:&nbsp;Zucchini is versatile and quick to cook, and grilling brings out a subtle sweetness that pairs beautifully with fresh herbs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredients:&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 medium zucchinis, sliced lengthwise<\/li>\n\n\n\n<li>3 tbsp olive oil\u00a0<\/li>\n\n\n\n<li>1 tbsp each of fresh basil, thyme, and rosemary, chopped<\/li>\n\n\n\n<li>Sea salt and black pepper<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Method:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat the grill to medium-high.<\/li>\n\n\n\n<li>Brush zucchini with olive oil and sprinkle with herbs.<\/li>\n\n\n\n<li>Grill 2-3 minutes per side until tender with grill marks.<\/li>\n\n\n\n<li>Season with salt and pepper and serve.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">Tip:&nbsp;Grilling over an open flame adds a smoky depth \u2013 one of my favourite tricks at Vergenoegd L\u00f6w.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Roasted Tomato &amp; Summer Herb Sauce<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Why I Love It:&nbsp;Roasting brings out the natural sweetness of summer tomatoes. It\u2019s my go-to for sauces, pasta, or roasted dishes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredients:&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>6 large ripe tomatoes, halved<\/li>\n\n\n\n<li>2 cloves garlic, crushed<\/li>\n\n\n\n<li>2 tbsp olive oil<\/li>\n\n\n\n<li>1 tsp each of thyme and rosemary<\/li>\n\n\n\n<li>Sea salt and pepper<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Method:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat the oven to 180 degrees celsius.\u00a0<\/li>\n\n\n\n<li>Toss tomatoes with olive oil, herbs, garlic, salt and pepper.<\/li>\n\n\n\n<li>Roast 30-35 minutes until soft and fragrant.<\/li>\n\n\n\n<li>Blend smooth or leave chunky, depending on use.\u00a0<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">Tip:&nbsp;Don\u2019t discard the peels \u2013 they can go to compost, feeding next year\u2019s garden.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Carrot Top Pesto<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Why I Love It:&nbsp;Carrot tops often get tossed, but they make a bright, fresh pesto that\u2019s perfect for pasta, grilled veggies, or as a garnish.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredients:&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup carrot tops, chopped<\/li>\n\n\n\n<li>\u00bc cup nuts ( pine nuts or almonds )<\/li>\n\n\n\n<li>\u00bc cup olive oil<\/li>\n\n\n\n<li>Juice of half a lemon<\/li>\n\n\n\n<li>Salt to taste<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Method:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Blend carrot tops, nuts, garlic, and olive oil until smooth.<\/li>\n\n\n\n<li>Add lemon juice and season with salt.<\/li>\n\n\n\n<li>Serve immediately or store in a jar for up to 3 days.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Citrus &amp; Spekboom Chutney<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Why I Love It:&nbsp;Spekboom is indigenous to the Cape and adds a subtle, fresh flavour to chutneys. I often serve this with roasted meats or cheeses at the restaurant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredients:&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup chopped spekboom leaves<\/li>\n\n\n\n<li>1 orange, zest and juice<\/li>\n\n\n\n<li>1 lemon, zest and juice<\/li>\n\n\n\n<li>2 tbsp brown sugar<\/li>\n\n\n\n<li>\u00bd tsp salt<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Method:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Combine ingredients in a saucepan over medium heat.<\/li>\n\n\n\n<li>Simmer for 15-20 minutes until thickened.<\/li>\n\n\n\n<li>Serve warm or cool and store in the fridge.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pickled Summer Vegetables&nbsp;<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Why I Love It:&nbsp;Pickling preserves summer flavours and adds a tangy, vibrant side to any meal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredients:&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 zucchinis, sliced into ribbons<\/li>\n\n\n\n<li>2 carrots, sliced into ribbons<\/li>\n\n\n\n<li>1 cup vinegar ( apple cider or white wine )<\/li>\n\n\n\n<li>\u00bd cup water<\/li>\n\n\n\n<li>2 tbsp sugar<\/li>\n\n\n\n<li>1 tsp salt<\/li>\n\n\n\n<li>Optional spices: mustard seeds, coriander seeds, chili flakes<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Method:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Bring vinegar, water, sugar, salt and spices to a boil.<\/li>\n\n\n\n<li>Pack vegetables into sterilized jars.<\/li>\n\n\n\n<li>Pour hot brine over vegetables and seal.<\/li>\n\n\n\n<li>Let pickle for at least 24 hours before serving.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">Tip:&nbsp;The brine can be reused for multiple batches \u2013 a small way we make every ingredient count.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Why I Love These Recipes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">These dishes are all about letting the&nbsp;garden shine.
